as far as meal planning goes for this week, i don't have too much to do.
monday: i just need some chicken from the store and i'm going to use up some stuff in the fridge for dinner tonight. we will have a yummy mixture of roasted carrots, prunes, onion and chicken over couscous. one of our favorites! ridiculously easy too!
tuesday: pork loin, roasted sweet potatoes, steamed green beans (matt LOVES a meat, starch and veggie!)
wednesday: the merciful day of leftovers! :)
that's all the meals i need for this week! yea! gosh, that's a beautiful thing! :)

Prunes, really? Sounds yummy but I'll have to substitute with apricot bits or something instead.
