menu planning monday

last week was awesome. i made the chicken spaghetti on monday and we ate it every night (m,t,w,t) with a salad! love it! i didn't have to cook for so many days! it's so nice to have a break like that b/c now i'm ready to make some yummy things this week...

monday: goat cheese + sun-dried tomato pasta. i'll add some marinaded chicken to make it go a little further. my favorite marinade for chicken is mojo criollo (scroll down; it's at the bottom of the page) by goya. it looks like muddy water, but adds great flavor to chicken. it's a great little boost to any dish. you can find it on the international isle at the store.
tuesday: beef stroganoff. it's our first time for this one. teri says it's a favorite at her house, so i thought i'd try it out. it needs to be in the crock pot for 8-10 hours, so i'll have to get it going before i go to the dentist. ugh.
wednesday: left overs.
thursday: left overs probably. if not, i have some baked potatoes and a salad on reserve.
friday: a favorite in our household...almond-apricot chicken. it's stuffed with goat cheese, almonds and apricots and then breaded with breadcrumbs and almonds on the outside. Y-U-M! broccoli & roasted potatoes will go on the side.
saturday + sunday: i'm off. left overs.

Mmmm..sounds so good! I'm using my slow cooker twice this week! Pork loin with carrots and potatoes today. Then tomorrow I'll slow cook some chicken with cilanto/lime rotel tomatoes to make chipolte chicken salad one night; and chicken tacos another night. Dude....I gotta go get some lunch!
