menu planning monday

i haven't done a great job at planning my meals for this week. at least i don't feel like i have. yesterday i was rearranging the freezer foods so they could be somewhat organized (translation: move stuff around so things don't come falling out when the door is opened!). anyway, i set a chicken breast on the top of the fridge only to find it later in the day pretty much thawed out. so, guess what we had tonight for dinner??? chicken!



monday: chicken pesto pasta with peas and mushrooms :: i bought the already made pesto in the containers, baked the chicken that i marinaded in goya marinade (yum!), and sauteed the peas and mushrooms with some garlic. it was a huge hit with matt and now we have left overs for tomorrow! yea!

tuesday: mercy day of left overs! :)


wednesday: one of my personal favorites, crispy tacos! it's probably been 4 years since i made tacos at home and i'm not sure why. it's way past due! i LOVE crispy tacos! another thing i love is tostados with refried beans! i'll have some of that on wednesday too! yum!! :) random i know, but it's just my thing. unfortunately i forgot a couple of things at the store today, so i have to go back. ugh.

thursday: dinner group! i'll bring salad and bread.

friday: not sure. since we eat at home so much i have truly come to appreciate going out to eat. it's such a treat for us. maybe matt will take me out on friday!

saturday: whatever is in the fridge. probably egg sandwiches or something.



sunday: pizza...it's become our regular sunday evening dinner.




one new thing i'm doing this week is spicing up our lunch. i'm tired of the same ole' meat, cheese, bread and lettuce. i stopped by krafts'men baking this morning and picked up a menu. i'm going to make the dowiak version of their turkey and brie. their description: smoked turkey breast and brie with avocado and apple-wood smoked bacon on a buttered toasted baguette. i'll do pretty much the same, but with the bacon i have already cooked that's in my freezer and instead of a toasted baguette, i just bought a fancier bread than i normally do. can't wait for lunch tomorrow! btw: i haven't actually eaten at krafts'men baking, so if you would like to make a lunch date with me and reese, let me know and we'll go!
