menu planning monday

i'm a little late on the "menu planning monday" post since it's tuesday and i'm just getting around to posting. is this a sign of how things are going to be this week??? hopefully not. i actually feel quite accomplished today. that's always good. anyway, my trip to dallas was cancelled b/c my dear friend katherine's son, parker, has a yucky virus. poor guy. i hope he gets better soon and that katherine doesn't get it. since i was planning to be out of town this week for a few days i wasn't doing much for dinner. i made a chicken spaghetti last night so matt would be able to eat the left overs while i'm gone. i asked him what he wanted from the store to make dinner while i was gone and he told me a couple of things and made a big deal out of the fact that he can still cook for himself. well, when i told him i decided to make the chicken spaghetti (super easy, btw) and he could have the leftovers, he was thrilled!! i love to know that he needs me. back to menu planning...leftovers tonight with a salad and i'm not sure for the rest of the week. i might just clean out the cabinets and have a hodge podge of things. do any of you have those kind of weeks???
sometimes i think it's lame posting about eating all the time, but really that's what i think about all the time. what is our family going to eat? what am i going to make for dinner? what will i feed reese? do i have enough veggies, fruits, protein, etc? experienced moms, is this just what moms do? i'm beginning to think so and it's a good thing i don't mind. :)

the thought of food is indeed so consuming. not to mention that if you want to be remotely healthy and economical, you have to plan ahead, which requires thinking about it before, during and then the cycle starts all over again! i cooked meatloaf, spinach, and carrots for tonight. delish.

Mario and I both had work dinner meetings tonight, but last night we had a new favorite. Wheat pasta tossed with spinach and grape tomatoes sauteed in olive oil and garlic, top with parm or romano cheese and fresh chopped basil. Bonus....all good for you ingredients!

jonathan and i have been eating leftovers from saturday. i made chicken empanadas served along a tossed salad. i am going to work on eating out of our freezer and cupbard over the next few weeks which means we will have tamales for dinner on thursday. wednesday is sushi night and friday is being planned by jonathan. happy planning!
